My favorite meal my husband makes is by far his shrimp and grits! He has turned grit haters into grit lovers with his own version of this rich, creamy, flavorful Southern recipe.
Ingredients: 4 cups Heavy Cream 1 cup Chicken Stock 1 cup Quick Grits 4 slices Thick Bacon cut into chunks and fried 1 stick Salted Butter 2 cups (or more) peeled and deveined Shrimp (I like the medium or small sized) Parmesan Cheese Salt, Pepper, Garlic, and Mikes All Purpose Seasoning or Cajun seasoning of your choice
Directions: Bring chicken stock and 3 cups of cream to a boil. Add grits, turn heat to low and cover until done. When done, add half a stick of butter to grits and some salt and pepper to taste. In a pan, melt butter and add shrimp. When shrimp are half way done (about 1.5 minutes) add remaining cup of cream or more cream if desired and add about a half cup of Parmesan—until you reach a creamy consistency and shrimp are cooked.

Serve shrimp over grits and enjoy!
